- 4 tablespoons flour
- 1/8 tbsp nutmeg
- 3 eggs separated
- 2 1/2 tablespoons butter
- 1 cup milk
- 1 tbsp salt
- 1/4 cup cracker crumbs

- In a small saucepan, melt butter
- Add flour gradually rotating with milk
- Let thicken and add seasonings
- Allow cooling slightly
- Transfer to mixing bowl
- Add beaten egg yolks and catfish
- Fold in stiffly beaten egg whites
- Turn into a grease casserole dish
- Sprinkle with cracker crumbs
- Bake in the oven at 350 degrees Fahrenheit 45 minutes to 1 hour
