  • 4 tablespoons flour
  • 1/8 tbsp nutmeg
  • 3 eggs separated
  • 2 1/2 tablespoons butter
  • 1 cup milk
  • 1 tbsp salt
  • 1/4 cup cracker crumbs

  • In a small saucepan, melt butter
  • Add flour gradually rotating with milk
  • Let thicken and add seasonings
  • Allow cooling slightly
  • Transfer to mixing bowl
  • Add beaten egg yolks and catfish
  • Fold in stiffly beaten egg whites
  • Turn into a grease casserole dish
  • Sprinkle with cracker crumbs
  • Bake in the oven at 350 degrees Fahrenheit 45 minutes to 1 hour
